Harissa Honey Chicken Legs w/ Roasted Mediterranean Style Vegetables
Most of this recipe was really birthed because I got an idea off of the internet and I had an insane amount of vegetables I needed to use up and a freezer full of chicken legs.
Harissa Honey Chicken Legs w/ Roasted Mediterranean Style Vegetables
(Serves 4-6)
ingredients:
6 chicken legs, scored and seasoned w/ kosher salt & cracked black pepper
1.5 tbsp Harissa
2 garlic cloves, minced or broken down to a paste with a mortar and pestle
1 tsp honey
1 tsp olive oil
Kosher Salt
Cracked Black Pepper
1 12 oz. Jar Victoria's Fine Artichoke Hearts w/ LIQUID
1 Lemon, halved and cut into eighths
1/2 lb haricots verts or green beans
8 oz container cherry tomatoes, halved
1, 6 oz can pitted black olives, drained (could also use pitted kalamata)
1 red onion, halved and cut into chunks
1 cup organic or homemade chicken stock
1/2 cup white balsamic vinegar
1. Preheat oven to 425 degrees. Combine all vegetables from artichokes to onions and toss lightly with olive oil, salt and pepper. Spread into baking dish/casserole dish. Pour artichoke heart liquid, chicken stock and vinegar over vegetables.
2. In a small bowl combine garlic paste, harissa, honey, olive oil and about 1/4 tsp salt and pepper. Whisk until combined. Using a silicon basting brush, coat chicken on all sides, being sure to use up all of the mixture. It's okay if it drips into the vegetables, that's called flavor. Slightly salt again with kosher salt.
3. Roast at 425 degrees for 30 min. Chicken legs will begin to darken, vegetables will start to roast and liquid will reduce.
4. Turn oven down to 350 degrees and roast an additional 20 minutes until chicken is cooked through but not dry.
5. Discard lemon wedges. Season dish if needed. Serve chicken legs, vegetables and juices over fluffy couscous immediately. Garnish with parsley and greek yogurt if desired.
I wasn't impressed with this meal as a leftover unless you perhaps pull the chicken from the bone and mix it into the leftover juices. The chicken legs dried out in the refrigerator overnight.
